This salad has bcome a HUGE favourite with the Huzz and I (I'm still 'encouraging' the kiddos!).
Having first tried this Whole Foods Market salad, and then seeing how easily it was made by a friend, I've been buying more brocolli than ever (a BIG health plus) and making huge bowls of salad to go alongside grilled salmon, homemade lamb burgers, or fresh tomato bruschetta (eaten outside in the sunshine yesterday evening).
There are so many versions of this salad recipe on the internet, but this is how we roll here .......
Serves 2 as a main course, or 4 as a side dish.
Cut the florets from the brocolli and thinly slice the stalk and cut into slivers. Wash thoroughly and set aside.
Grill the bacon and until nice and crispy. Set on a paper towl to absorb any extra grease. Leave to cool. Once cool, chop into small pieces.
In a bowl whisk together all the dressing ingredients.
Mix the dressing into the brocolli, and then add the bacon, red onion and raisins.
Serve nicely chilled or at slight room temperature.

6 rashers of bacon
Half a large red onion chopped fairly small
Half a cup of raisins
(additions can be sliced almonds, candied cashews, walnuts)
Dressing
Half to one cup of mayonnaise depending on how mayonnaisey you like it
(homemade if you prefer and have the time)
2 tsp cider vinegar

1tsp lemon juice
2 tbs sesame tahini
2 tsp Dijon mustard
A slug of extra virgin olive oil

Pinch of salt and pepper
